The building where it is located re f lects the intersection of cultures and the evolution of Panama, from colonial times to modernity. Chef Pablo Viluce, in his preparations and ingredients, many of which are grown in the country, contribute to the concept of environmental conservation through the use of seasonal ingredients, local agroecology and regional producers. The raw materials, mostly locally acquired, cover endless possibilities unique to the region, since Panama’s favorite dishes require its exclusive tropical ingredients, full of flavor and nutrients typical of Panamanian cuisine. Its cocktail menu includes a variety of nationally produced rums and house variations where in gredients such as cocoa, coffee, banana, pineapple and passion fruit stand out. Among them we can highlight the Signature Cock tails created in Ossa named after the emblematic years of Panama, 1903, 1914 and 1821.
