Gastronomic and Historical Experience

The flagship dining room of the Hotel La Compania, 1739 is located inside the ancient walls of the chapel of the San Xavier University, adjacent to the ruins of the Jesuit church erected in the year 1739, from which the restaurant takes its name. With its high, elaborate ceilings and magnificent Calicanto walls, the space captures the fantastic feeling of travelling through time. This trip back through centuries of history and culture allows guests to enjoy the simple art of dining, accompanied by the finest wines and spirits, and surrounded by the images and the spirits of some of Panama’s most historic. Not just a restaurant, 1739 is a gastronomic and historical experience where French elegance meets contemporary luxury, and where every detail is carefully considered to offer patrons the best cuisine in an exceptional setting.

The kitchen uses local and sustainable ingredients whenever posible, not only to support local producers, but also to reduce their carbon footprint. They ensure that every dish meets the highest standards of quality and flavor. The freshness of ingredients and precision in preparation and presentation are essential to maintaining a top-notch dining experience.

They work meticulously to create an ambience for the restaurant that provides a welcoming and elegant environment to complement the guests’ dining experience. They also value their patrons opinions, seeking their comments both in person and on digital platforms. Active listening allows them to identify areas for improvement and helps them recognize what their guests appreciate and enjoy. The goal is to provide not just exceptional food, but a complete dining experience that leaves a lasting impression on each and every guest.
